5 MINUTE KETO PUDDING

This is my go-to quick snack when I'm craving something in the evenings. Sometimes I'm not looking for nourishing calories, so I make it with almond milk or even water. Other times I'm wanting some healthy fats, so I use coconut milk. The glucomannan fills me up and gives me some good prebiotic fiber as well.

Feel free to use any combination of liquid equaling 1 cup.

This blends better when it is doubled, so make some to share or save for another day.

Vanilla Keto Pudding

1 cup unsweetened almond milk, coconut milk, or 1/3 cup coconut milk and 2/3 cup water

1 tsp. vanilla extract

1 tsp. vanilla collagen or protein powder(optional)

1/4 tsp. stevia powder (or stevia drops to taste)

pinch of sea salt

Chocolate Keto Pudding

1 cup unsweetened almond milk, coconut milk, or 1/3 cup coconut milk and 2/3 cup water

(all water works too)

1 tsp. vanilla extract

1 tsp. chocolate collagen or protein powder (optional)

1-11/2 tbsp. cocao powder

1/4-1/2 tsp. stevia powder (or stevia drops to taste)

pinch of sea salt

Put all the ingredients into a blender. Blend until mixture becomes thick, about 3 minutes. Pour into cup and eat immediately or put in fridge to thicken more. This will thicken more if left in the blender for a few minutes as well, after mixing. Serve plain or with cocao nibs, strawberries, shredded coconut, or even chopped almonds.
